I was at Target getting the girls a cake pop the other day when I noticed they had their pumpkin bread in for the season. And, being so extra I took it upon myself to try apiece. From that moment on I was hooked. Starbucks Pumpkin Bread took hold of all my Fall baked-goods-dreams and had me coming back for more!
But if you’re on a budget then you know you can’t afford to buy one piece of their bread every time you crave it, so I hit the internet in search of a delicious copycat version. I found a few options but had to alter them, and this my friends, this will be your forever Pumpkin Bread recipe. But don’t take my word for it…
Ingredients:
3 eggs
1 (15 oz) can of pumpkin
1/2 cup vegetable oil (some use sunflower seed oil)
1 cup of sugar
1/4 cup of brown sugar
2 teaspoons of vanilla
1 1/2 cups of flour
2 teaspoons of pumpkin pie spice
1 teaspoon of baking soda
3/4 teaspoon of baking powder
1/2 teaspoon of salt
Instructions:
- Preheat oven to 350 degrees and grease bread pan(s). (I’ve used 9×5 and 8×4 they both work great but you will need 2 8×4 pans for this recipe).
- Add eggs to your mixing bowl and mix.
- Add pumpkin. Mix.
- Add oil, sugars, and vanilla. Mix.
- Add flour, pumpkin pie spice, baking soda, baking powder, and salt. Mix.
- Pour mixture into your bread pan(s).
- Bake for 40-45 minutes depending on your oven. Make sure you place your bread pan(s) a bit further away from your coils (this helps keep the bread soft and not burnt, my mom taught me that. Thanks mom!)
- Once bread is cooked all the way through let it rest for 10-15 minutes or till desired warmth.
Big shout out to these cute little Hanna hands. She devoured the first piece of pumpkin bread before I could take a proper picture of it. THAT’S how good this is!
