So a few months back my friend Mary sent me this delicious recipe -she also made it for me and added flax seed- so you could say this is her recipe and not mine really. I like doing half a recipe because they take quite a while to bake and half makes the perfect dozen so I don’t have to heat up the house too much.
1/4 cup butter
1/2 cup sugar
1 egg
2 mashed bananas
1 cup flour
1/2 tsp baking soda
pinch of salt
3/4 cup blueberries
1/4 cup flax seed -add more if you prefer
Preheat oven to 350 degrees
in a bowl beat together sugar and butter until creamy.
add mashed bananas and egg to mixture -beat together.
add baking soda, salt, flour, and flax seed -beat well.
add blueberries and stir in with a spoon.
line a muffin pan and add mixture.
bake for 30 minutes.
Hazel decided she wanted to help me in the kitchen this morning, and to my surprise she could pick up the bin of blueberries!
