Brand and I made these yummy sauteed potatoes the other night and we really enjoyed them. They are so simple to make, this is definitely a no pressure side dish.
You will need
Charlotte potatoes – small golden potatoes can be found at Fry’s
Salt
Butter
Garlic (one clove really depends on how much you make)
Rosemary
Olive oil
First, (after you have washed the potatoes of course) cut them in half (see picture to determine what “in half” means.)
Second, place them in a pot of salted boiling water. Cook them for 4-5 minutes with the lid on. To test that they are ready take a small knife and poke the potato, the knife should just run through with a little bit of resistance.
Third, dump them into a colander (make sure the colander has a pot underneath it because you want the strained potatoes to sit in the steam of the water, this will allow them to crisp)
Fourth, get a non stick frying pan hot, place olive oil in the frying pan.
Fifth, place the potatoes in the frying pan with the flat part down, here we are going to get them crispy.
Sixth, salt, pepper and crushed garlic to the potatoes while waiting for them to turn a gold color (on the bottom).
Seventh, once the potatoes are golden on the bottom flip them over to the rounded backs.
Eighth, place the butter in the pan along with chopped rosemary (you will want to place the rosemary on the potatoes though).
Ninth, take the potatoes out of the pan and you are done!
